Apicius Amateur | Food and Wine Lessons

Apicius offers customized cooking workshops in standard and VIP formats. Lectures with tastings in food and wine topics, as well as market tours are also available. In addition, Apicius offeres group classes and a special package option.

Apicius International School of Hospitality is the first International School of Hospitality in Italy. Founded in 1997, the school is now an internationally respected leader in academic, professional and career oriented education. Participants of cooking workshops will be able to enjoy the recipes they have prepared with the Chef following the activity. Select workshops are also available in a VIP format. Food and wine lectures and market tours include tastings.

VIP cooking workshops are enhanced by special amenities that differentiate the experience from the standard format. Workshop titles marked with an asterisk (*) are offered as a VIP option. Special VIP amenities include:

FRESH FOOD MARKET TOURS

The secret of Italian cuisine secret is in the quality of ingredients, and right place to be to create a great dish is one of Florence’s markets. Experience seasonal, fresh daily produce and local specialties and learn how to recognize the freshest fish, vegetables and fruits, or the traditional meat cuts. Get lost in the incredible variety of cheese and salumi, breads and wines and live like a local picking up the best produce available.

Tour will include a tasting of typical and seasonal products from local vendors. Market tours of single markets are 1.5 hours long. Three markets in one day and Fierucola del Grano are 3 hours long. Market tours are morning activities and follow the schedule of the markets. Participants may visit one or more of the following:

GROUP CLASSES

Group classes are held year-round. Participants may join the workshop series The Florence Food & Culture Experience to learn new skills and meet new people.

THE FLORENCE FOOD & CULTURE EXPERIENCE

This flexible, non-credit food and culture program can be taken as a 3-week program, single lessons, or single weeks. It is open to all types of participants including the general public, visitors, small groups and individuals already enrolled at FUA-AUF during the period of stay in Florence. The course consists of lectures, hands-on workshops, tastings, field trips, guest lectures, and audio-visual material. Each class includes a hands-on cooking session. Teaching methodology: lectures are complemented by cooking labs and tastings, according to the class.

The course is structured in five different modules:

Mondays: Regional Cuisine
Tuesdays: Tuscan Cuisine
Wednesdays: Italian Wine Culture
Thursdays: Italian Baking and Pastry
Fridays: Tours and visits in Florence (examples: Italian Gastronomy: A Savory Tour, The Enoteca and Wine Bar: Delicious Combinations, Italian Classics: Sweets and Coffee)

Participants can take:

SP1. One-Day Tuscan Wine Tour

This one-day special package experience will focus on an introduction to wine culture in Tuscany followed by a guided wine tour, including a 3 course light lunch and visits to two wineries which are representative of Tuscan wine excellence.
